Bacanora is a distilled spirit originating from the state of Sonora, Mexico. It is made from the cooking, fermentation, and distillation of agave, as are tequila, mezcal, sotol, and raicilla; these four alcoholic beverages are protected by designations of origin. This spirit is obtained from the Angustifolia Haw agave variety. Sierra de Sonora. It is generally a colorless beverage with a high alcohol content, ranging between 38% and 55% alcohol by volume. Part of this process is its underground volcanic stone oven cooking accompanied by a 6 to 12 day fermentation with spring water with double distillation in a copper still.

It was considered “illegal” for a period of 77 years. It did not have permission or support from the state or national government for its production, until a series of regulations were issued in 1992 to allow the industry to develop again.

By the year 2000, it obtained the Denomination of Origin distinction in 35 municipalities in the mountainous region of Sonora, becoming the only agave distillate produced in a single state of Mexico.

The word Bacanora comes from the indigenous Opata language, originally Bacanoraco, and is interpreted as "Reed Hillside." It derives from the linguistic roots Baca, meaning "reed," and Noraco, meaning "hillsides." This ethnic group, originally from the lower and semi-high mountains of Sonora, made a fermented beverage from roasted agave and water for their most important rituals and festivities.
